1½ cups Scotty’s Everyday Aulluose & Monk Fruit Zero Calorie Sugar Replacement
¾ teaspoon lemon juice
¼ teaspoon cream of tartar
½–1 teaspoon honey extract, or to taste*
Directions
Bring the water to a boil in a heavy-duty saucepan.
Add the Scotty’s Everyday Allulose & Monk fruit Sweetener, lemon juice, and cream of tartar. Stir until the sweetener has completely dissolved and the mixture is clear.
Reduce the heat and simmer gently until the mixture develops a golden amber color, about 15–20 minutes. Watch it closely toward the end—you don't want the sweetener to become too dark or burn.
Remove from the heat. Add the honey extract and stir thoroughly to combine. Allow the mixture to cool before tasting, then add additional honey extract if you want a stronger honey flavor.
The mixture will thicken as it cools. Store your finished sugar-free honey at room temperature or in the refrigerator.
Recipe Note
Honey extracts vary considerably in strength. If you're using a super-strength extract, start with about ½ teaspoon. You can always add more after the mixture has cooled.
