Ingredients

2 tablespoons unsalted butter

1 cup fresh cherries, stemmed and pitted

3 large eggs

1 cup low-carb milk of choice
-
¼ cup heavy cream

Pinch of salt

2 teaspoons Scotty's Everyday Vanilla Extract

¼ teaspoon almond extract
-
¼ cup Scotty's Everyday Allulose & Monk Sugar Replacement
-
½ cup Scotty's Everyday Cupcake & Cake Mix, spooned into a measuring cup and leveled
Directions
Preheat the oven to 375°F with the rack in the center position.
Place the butter in a 2-quart glass or ceramic baking dish. Place the dish in the oven until the butter has melted, then swirl to coat the bottom and sides.
Arrange the cherries evenly in the prepared baking dish.
In a blender, combine the eggs, low-carb milk, heavy cream, salt, vanilla extract, and almond extract. Blend until combined. Add the Scotty's Everyday Allulose & Monk Fruit Sweetener and Scotty's Everyday Cupcake & Cake Mix, then blend until smooth.
Pour the batter evenly over the cherries.
Bake for 40–45 minutes, or until puffed, golden brown, and just set. The center should still have a slight jiggle, but a knife inserted near the center should come out clean.
Cool on a wire rack for about 30 minutes. Dust with additional Scotty's Everyday Allulose & Monk Fruit Sweetener, if desired.
Serve warm or at room temperature with vanilla ice cream or whipped cream.
