Smoked Gouda Everything Bagels (low Net Carb & Gluten Free)
2 tablespoons Everything But the Bagel seasoning, divided
½ cup shredded smoked Gouda cheese
1 tablespoon avocado oil
Directions
Activate the Yeast
Add the maple syrup or sugar to the warm water and stir. Sprinkle in the yeast and let sit for 5–10 minutes until bubbly and foamy. Stir in the avocado oil.
Prepare the Dough
Reserve 1 tablespoon of the pizza crust mix for bench flour.
Place the remaining pizza crust mix into the bowl of a stand mixer. Add the egg white protein powder, 1 tablespoon Everything Bagel seasoning, allulose sweetener, and shredded Gouda. Mix to distribute the ingredients evenly.
Using the paddle attachment, slowly add the yeast mixture and mix on low speed until a dough forms. Continue mixing for about 1 minute.
Form the dough into a ball, cover, and let rest for 15 minutes to hydrate.
Shape the Bagels
Divide the dough into eight equal portions and roll each into a ball. Lightly dust your hands and counter with the reserved mix if needed.
Press your finger through the center of each dough ball and gently stretch the opening until it is about one-third to one-half the diameter of the bagel. Place on a parchment-lined or lightly greased baking sheet.
Cover with a damp kitchen towel and allow the bagels to rise in a warm place for 40 minutes.
Boil the Bagels
Bring a large pot of water to a gentle boil and add the baking soda. Reduce heat to medium.
Using a slotted spoon, carefully lower the bagels into the water without overcrowding. Boil for 30 seconds, flip, and boil for another 30 seconds.
Transfer back to the baking sheet and immediately sprinkle the tops with the remaining Everything Bagel seasoning.
Bake
Preheat oven to 425°F.
Bake for 15–20 minutes, or until golden brown and the internal temperature reaches 200°F.
Cool completely on a wire rack.
