Sweet potato pancakes that feel indulgent—but are actually keto, vegan, AND gluten-free, enough said right?! This stack has all the flavor and none of the sugar crash, thanks to @scottyseveryday.
ingredients:
- 1 cup scotty's everyday pancake mix
- 3 tbsp water
- 1/4 cup canned sweet potato puree
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
instructions:
- In a bowl, whisk together water, sweet potato, and vanilla.
- Add in pancake mix and cinnamon andstir gently until most all clumps are gone but without overmixing.
- Heat a frying pan on the stove and coat with avocado oil spray. Once warm, pour batter onto pan toform 3 pancakes.
- Let cook for 3-5 minutes per side and flip then plate pancakes and top with maple syrup, pecans, and any other toppings you desire!
