Sugar-Free Vanilla Panna Cotta

Ingredients

1 envelope (.25 oz) unflavored gelatin (2½ tsp)

¼ cup cold water

2 cups heavy whipping cream

⅓ cup Scotty’s Zero Calorie Allulose & Monk Fruit Sugar Replacement

¾ tsp Scotty’s Vanilla Extract

Fresh raspberries, blueberries, blackberries, mint sprigs
Topping (optional)
Directions
In a small bowl, sprinkle gelatin over cold water. Let sit for 5 minutes to bloom.
In a medium saucepan, combine heavy cream and sweetener. Heat over medium until steaming and small bubbles form around the edges (do not boil).
Remove from heat. Stir in vanilla extract and bloomed gelatin until fully dissolved.
Let mixture sit for 5–10 minutes (prevents separation and condensation).
Divide evenly among 6 small glasses or ramekins.
Refrigerate for at least 4 hours, or until fully set.
Topping
Top with fresh berries and mint just before serving.
Recipe Note
Texture control:
For a softer, more delicate panna cotta → reduce gelatin slightly (~2 tsp)
For firmer, cleaner unmolding → keep full amount
No graininess:
Allulose dissolves easily, but make sure the mixture is fully hot before adding gelatin
Prevent skin formation:
Lightly cover with plastic wrap once slightly cooled if storing overnight
