ingredients:

  • 1 cup scotty's everyday pancake mix
  • 1/4 cup freeze-dried strawberries
  • 1 tsp scotty’s vanilla extract
  • 1/2 cup fresh strawberries
  • 1 tbsp melted butter
  • 3/4 cup milk
  • 1 egg

instructions:

  • In a mixing bowl, whisk together scotty’s everyday mix and crushed freeze-dried strawberries.
  • Stir in milk, egg, melted butter, and vanilla extract until combined. Let the batter rest for 5 minutes for fluffier pancakes.
  • Heat a non-stick skillet over medium heat and lightly grease with butter or oil. Then pour 1/4 cup of batter per pancake and cook until bubbles form on the surface (about 2 minutes).
  • Flip and cook another 1-2 minutes until golden brown then stack pancakes on a plate and top with fresh strawberries, a generous dollop of whipped cream, and a drizzle of syrup.
