Move over scrambled eggs—there’s a new breakfast hero in town! These fluffy scrambled pancakes are just as fast but way more fun, thanks to our keto pancake mix!

pancake ingredients:
- 1/2 cup scottys pancake mix
- 3 tbsp water
- 1 egg
- 1 tsp vanilla
- 1 tsp cinnamon
cream cheese frosting:
- 2 tbsp cream cheese
- 2 tbsp powdered sugar keto-friendly
- 2 tbsp yogurt of choice

instructions:
- Prepare pancakes as instructed, adding in the additional cinnamon to the batter.
- In a frying pan add 1 tbsp of oil/butter. Once heated, pour the pancake batter and let cook for 3-5 minutes until lightly golden brown on one side.
- Start to break the batter up as you would scrambling an egg, once the pancakes reach a golden brown, add to a plate or bowl and top with the cream cheese frosting and any other additional toppings you desire!
