½ cup (1 stick) unsalted butter, melted and cooled slightly
1 teaspoon Scotty’s Everyday Vanilla Extract
3 tablespoons pepitas (pumpkin seeds) for topping
Directions
INSTRUCTIONS
Preheat oven to 325°F. Lightly grease an 8 × 4-inch loaf pan.
Mix dry ingredients: In a large bowl, whisk together the Bread Mix, Allulose & Monk Fruit Sugar Replacement, cinnamon, nutmeg, and ginger until evenly combined.
Mix wet ingredients: In a medium bowl, whisk together the pumpkin purée, melted butter, and vanilla extract until smooth.
Combine: Add the wet mixture to the dry ingredients and stir until fully incorporated and no dry streaks or lumps remain.
Transfer & top: Pour batter into the prepared pan, smooth the top, and sprinkle with pepitas, pressing lightly so they adhere.
To Bake
Bake for 55–65 minutes, checking after 40–45 minutes. The loaf is done when the center is firm and a toothpick inserted comes out clean.
Cool: Let the loaf cool in the pan for 20 minutes, then remove and transfer to a wire rack. Cool completely before slicing.
