Baby got Babka!

I love how versatile @scottyseveryday keto bread mix is! I made a PB&J Babka using @jifbrand Natural PB and @natures.hollow Mountain Berry Jam. Scotty's keto bread mix allows you to still make all of your favorites while keeping it keto. 

ingredients:

  • 1 pack of Scotty's Everyday Bread Mix 
  • 1/3 cup of @kingarthurbaking baking sweetener
  • Warmed unsweetened almond milk
  • 1 tsp of brown sugar
  • Melted @kerrygoldusa butter
  • @jifbrand Natural PB
  • @natures.hollow Mountain Berry Jam
  • Loaf with syrup made with a 1:1 ratio of sweetener and water

instructions

  • Follow the instructions on the Scotty's Keto Bread Mix bag with the following modifications: 
  • Added 1/3 cup of @kingarthurbaking baking sweetener to the dry mix
  • Sub warmed unsweetened almond milk for the water
  • Add yeast along with 1 tsp of brown sugar to the almond milk
  • Sub melted @kerrygoldusa butter for olive oil
  • After allowing the dough to rise, divide it into two sections
  • With well-oiled hands, flatten each section into a rectangle
  • Spread peanut butter on one and jam on the other
  • Roll up each section lengthwise, then twist them together before carefully placing in a well greased loaf tin
  • Bake for 40 mins at 350F
  • To finish, brush the baked loaf with syrup made with a 1:1 ratio of sweetener and water
