Baby got Babka!
I love how versatile @scottyseveryday keto bread mix is! I made a PB&J Babka using @jifbrand Natural PB and @natures.hollow Mountain Berry Jam. Scotty's keto bread mix allows you to still make all of your favorites while keeping it keto.
ingredients:
- 1 pack of Scotty's Everyday Bread Mix
- 1/3 cup of @kingarthurbaking baking sweetener
- Warmed unsweetened almond milk
- 1 tsp of brown sugar
- Melted @kerrygoldusa butter
- @jifbrand Natural PB
- @natures.hollow Mountain Berry Jam
- Loaf with syrup made with a 1:1 ratio of sweetener and water
instructions
- Follow the instructions on the Scotty's Keto Bread Mix bag with the following modifications:
- Added 1/3 cup of @kingarthurbaking baking sweetener to the dry mix
- Sub warmed unsweetened almond milk for the water
- Add yeast along with 1 tsp of brown sugar to the almond milk
- Sub melted @kerrygoldusa butter for olive oil
- After allowing the dough to rise, divide it into two sections
- With well-oiled hands, flatten each section into a rectangle
- Spread peanut butter on one and jam on the other
- Roll up each section lengthwise, then twist them together before carefully placing in a well greased loaf tin
- Bake for 40 mins at 350F
- To finish, brush the baked loaf with syrup made with a 1:1 ratio of sweetener and water
