These mini matcha coconut waffles are the perfect bite-sized treat—light, crispy, and packed with earthy matcha flavor and a hint of coconut sweetness.

ingredients:
- 1 package scotty's everyday waffle & pancake mix
- 2 tsp matcha powder
- 2/3 cup milk
- 1 egg
- 1/4 cup melted coconut oil
- 2-3 tbsp maple syrup
- 1 tsp vanilla extract
- 2 tbsp shredded coconut
- mini dark chocolate chips
- salt

instructions:
- Preheat your waffle iron and lightly grease with oil.
- In a large bowl, whisk together the scotty’s waffle mix, matcha powder, and a pinch of salt.
- In a separate bowl, whisk the egg, milk, oil, vanilla extract, and maple syrup.
- Gradually pour the wet ingredients into the dry ingredients and then add in the coconut flakes and chocolate chips, stirring gently until just combined. If the batter feels too thick, add a bit more milk to thin it out slightly.
