These raspberry mini pancakes are the perfect balance of sweetness and fluff, with juicy bursts of raspberry in every bite without the sugar crash. Perfect for breakfast, brunch, or a quick snack!

ingredients:
- 1/2 cup scotty's everyday pancake mix
- 3 tbsp water
- 1 egg
- raspberries
- 2 tbsp avocado oil
- 1 tsp scotty’s everyday pure vanilla extract

instructions:
- Heat up a pan on medium sized pan on medium heat.
- Whisk together the water, egg, oil, and pancake mix. Once mixed, add in the raspberries.
- With a spoon, drop small dollops of batter onto the pan. Cook until golden before flipping.
- Add toppings of choice, I did some more berries but whipped cream or maple syrup would be good as well!
