Ingredients

1 medium apple, cored and sliced into thin ⅛-inch slices

2 teaspoons lemon juice

¼ cup Scotty’s Allulose/Monkfruit Sugar Replacement

3 tablespoons unsalted butter, melted

¼ teaspoon molasses
-
¼ teaspoon ground cinnamon

1 package Scotty’s Everyday Cupcake & Cake Mix

¾ teaspoon ground cinnamon or apple pie spice blend

6 tablespoons unsalted butter, melted

3 large eggs
-
⅓ cup water
-
1 tablespoon Scotty’s Vanilla Extract
Directions
Preheat oven to 325°F. Spray an 8- or 9-inch round cake pan with nonstick cooking spray. Line the bottom with parchment paper and lightly spray the parchment.
Toss the apple slices with lemon juice to prevent discoloration.
In a small bowl, whisk together the ¼ cup sweetener, 3 tablespoons melted butter, molasses, and ¼ teaspoon cinnamon. Spread the mixture evenly over the bottom of the prepared pan. Arrange the apple slices in a single layer over the mixture, completely covering the bottom.
In a small bowl, lightly beat the eggs. Add the water and Scotty’s Vanilla Extract and mix to combine.
Pour the Scotty’s Everyday Cupcake & Cake Mix into a separate large bowl. Add ¾ teaspoon cinnamon or apple pie spice and whisk to combine.
Add the 6 tablespoons melted butter and egg mixture to the dry ingredients. Using a wire whisk or hand mixer on the lowest speed, mix for 1 minute, until well combined and no lumps remain. Stop once to scrape the sides and bottom of the bowl.
Gently spread the batter over the apples, taking care not to disturb the arrangement. Firmly tap the pan on the counter to settle the batter.
Bake for 35–40 minutes, or until a toothpick inserted into the cake comes out clean and the internal temperature reaches 200°F.
Cool in the pan for 10 minutes. Run a knife around the edge to loosen the cake, then carefully invert it onto a flat serving plate.
