2 tablespoons Scotty’s Allulose & Monk Fruit Zero Calorie Sugar Replacement
3 large eggs, room temperature
1 tablespoon Scotty’s Vanilla Extract
6 tablespoons unsalted butter, melted
½ cup buttermilk, shaken before measuring
Glaze
8 tablespoons unsalted butter (1 stick)
½ cup Scotty’s Allulose & Monk Fruit Zero Calorie Sugar Replacement
Pinch of salt
2 teaspoons Scotty’s Vanilla Extract
1 teaspoon almond extract
Directions
Preheat oven to 350°F. Line an 8x4-inch loaf pan with parchment paper and lightly spray with nonstick spray.
Prepare the cake according to the package directions, except substitute the water with ½ cup buttermilk and add 2 tablespoons additional sweetener.
Pour the batter into the prepared loaf pan and bake for 40–50 minutes, or until the internal temperature reaches 195–200°F in the center.
Allow the cake to cool in the pan for about 10 minutes.
Remove the cake from the pan and place it on a wire rack over a sheet pan to catch excess glaze.
Prepare the glaze: In a small saucepan, combine butter, sweetener, and salt. Heat over medium-low until melted and smooth. Remove from heat and whisk in vanilla and almond extracts.
While the cake is still warm, brush the glaze generously over the top, sides, and bottom of the cake until fully coated.
Cool completely before slicing.
Store in an airtight container at room temperature for up to 3 days.
