I know we're not the only ones that have craved fall in a glass...and no we're not talking about a PSL. This fig and pear mocktail is sugar-free, keto-friendly, and bursting with cozy flavors thanks to our zero-calorie sweetener! Shoutout to @dliciouslyinspired for this awesome recipe!
fig syrup ingredients:
- 1/4 cup scotty's everyday zero-calorie sweetener
- 1/2 tsp lemon juice
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 cup water
- 1 cup fresh figs
- 1 ripe pear
mocktail ingredients:
- 1 cup cold sparkling water or soda water
- 1/4 cup lemon juice
- fresh fig
- fresh mint
- Ice cubes
instructions:
- In a saucepan, combine the fresh figs, diced pear, water, Scotty's sweetener, lemon juice - about 2 lemons worth, cinnamon, and nutmeg.
- Heat over medium heat until it simmers for about 10-15 minutes, then blend until smooth.
- In an ice-filled or chilled glass, mix the fresh lemon juice and about 2-3 tablespoons of the Fig-Pear Syrup- adjusting to taste.
- Top with cold sparkling water for a fizzy finish, stir gently to combine, and garnish with fresh fig slices and mint leaves if desired.
- For a little extra oomph- sprinkle a pinch of cinnamon on top for a touch of flavor and visual appeal.
- Serve immediately and enjoy!
