cupcake ingredients:
- 3/4 cup scotty's everyday cupcake mix
- 1/4 cup butter- melted
- 1 large egg- room temperature
- 1/2 tbsp vanilla extract
- 1/4 tsp ground nutmeg
- 1/4 cup eggnog
eggnog buttercream ingredients:
- 1/2 cup butter- room temperature
- 1 3/4 cup powdered sugar
- 1/8 cup eggnog
instructions:
- Preheat the oven to 350°F and line a 6 cup cupcake pan.
- In a bowl, whisk together melted butter, egg, vanilla, nutmeg, and eggnog. Add scotty’s everyday cupcake mix and stir until smooth and thick.
- Pour batter into cupcake liners (about halfway full). Bake for 18–22 minutes or until a toothpick comes out clean. Let cupcakes cool completely.
- For the buttercream: Beat butter until smooth. Gradually mix in powdered sugar until fully combined. Add eggnog and beat on high until light and fluffy.
- Frost cooled cupcakes, garnish with a cinnamon stick and ground nutmeg, and enjoy!
