double chocolate peppermint protein muffins

Ingredients
- 1 package scotty's everyday cake mix
- 6 tbsp melted butter
- 3 eggs
- 1/3 cup water
- 1/2 cup cacao powder
- 1 tsp peppermint extract
- sugar-free dark chocolate chips
- 1 scoop vanilla or chocolate protein powder
Directions
Preheat the oven to 350°F
In a large bowl, combine scotty’s everyday cupcake mix and cacao powder. Stir until evenly mixed.
Add the peppermint extract, protein powder, and the 1/3 cup water or milk. Stir until smooth.
Gently fold in a handful of sugar-free dark chocolate chips for a festive chocolatey touch.
Divide the batter evenly among the 12 muffin cups, filling each about 2/3 full.
Place the muffin tin in the oven and bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
Once finished baking, remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack.
To add a touch of holiday spirit, sprinkle the cupcakes with sugar-free powdered sweetener once they've finished cooling.
