Ingredients
- 1 package scotty's everyday cake mix
- 6 tbsp melted butter
- 1 tbsp vanilla extract
- 1/3 cup water
- 3 eggs
Directions
Set your oven to 325°F, grab a small silicone mold for cupcakes, and spray with avocado oil.
Mix the eggs, melted butter, water, and vanilla extract in a large bowl, then add dry Ingredients. Stir in the scotty’s cupcake & cake mix until everything is well combined.
Scoop the batter into each cupcake mold. Customize each cupcake by adding different mix-ins such as pistachios, chocolate, or blackberries to create unique variations.
Bake for 20-22 minutes or until a toothpick comes out clean.
Let the cupcakes cool completely before topping with melted chocolate, more crushed pistachios, or freeze-dried strawberries
Additional optional toppings:
Drizzle with melted chocolate, sprinkle with crushed pistachios, top with fresh blackberries, top with Greek Yogurt sweetened with a bit of monk fruit, or sprinkle freeze-dried strawberries for an extra treat!
