Looking for a dessert that captures the magic of the holidays? Look no further! This Christmas tree-shaped fruit cake is sure to dazzle! With a moist and fluffy vanilla cake on the inside, a creamy vanilla frosting and beautifully adorned with fresh fruit on top- this cake acts as both a dessert and a centerpiece!
ingredients:
- 1 package scotty's everyday cake mix
- 1 tbsp scotty's everyday vanilla extract
- 6 tbsp butter
- 2/3 cup water
- 1 tbsp collagen
- 3 eggs
frosting ingredients:
- 1 block cream cheese
- 1 1/2 sticks butter
- 1 1/8 cups powdered sweetener
- 1/2 tsp scotty's everyday vanilla extract
- 1/2 tsp peppermint extract
instructions:
- Preheat the oven to 325°F
- Mix eggs, butter- room temperature, vanilla extract, water and scotty's everyday mix in a bowl then pour the cake batter into a cake pan
- Bake for 22 minutes
- Cut out washed plastic from a water container to form a triangular shape. Once the cake is done baking and cooling, use three different size circular cookie cutters to cut out pieces from the cake.
- For the frosting layer, mix heavy whipping cream, cream cheese, peppermint extract, and monk fruit. Then spread a generous layer of frosting between each layer of cake.
- Use the remaining frosting to cover the entire cake and set in the freezer for 30 minutes.
- After cake has sat in freezer to set, add fruits and edible flowers to the outside of the Christmas tree cake.
