Craving a cookie that’s healthy, soft, chewy, and filled with little bursts of sweet blackberries. These Greek yogurt blackberry cookies are it. Simple ingredients, big flavor, and so easy to whip up.

ingredients:
- 1/2 cup scotty's everyday monk fruit & allulose sweetener
- 1/2 cup blackberries
- 1 egg
- 1/4 cup & 3 tbsp greek yogurt
- 2 tbsp honey
- 1 tsp vanilla extract
- 1 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1 1/2 cup almond flour
- 1/2 cup cassava flour

instructions:
- Preheat oven to 350° F and line a baking sheet with parchment paper.
- Mix all wet ingredients in a bowl. Then add the dry ones & mix.
- Fold in the blackberries then scoop dough onto the sheet and flatten dough a little with your hand.
- Press half a blackberry on top of each cookie for an extra fruity kick and bake for 10–12 minutes!
