We can't be the only ones who wake up with a sweet tooth every now and then...right?! These apple fritter pancake bites have all the cozy warm flavors of cinnamon spice, sweet juicy apples, and the buttery richness of pancake batter. you NEED to try this one!

ingredients:
- 1/2 cup scotty's everyday pancake mix
- 3 tbsp water
- 1 apple
- 1 egg
- 2 tbsp avocado oil
- 1 tsp scotty’s everyday pure vanilla extract

instructions:
- In a large bowl, whisk together the water, egg, vanilla extract, and pancake mix.
- Take your apple and cut it vertically into 1/4” - 1/2” slices.
- Using a mini circular cookie cutter, cut out circles from the apple.
- Dip the apple rounds into the pancake batter to coat.
- Heat a ceramic pan on medium-low flame and coat the pan with 1-2 tbsp avocado oil.
- Place the pancake battered apples on the pan. Cook them for a few minutes until golden on both sides.
- Serve with maple/coconut sugar, cinnamon, and pure maple syrup. Enjoy!
