Ingredients
- 1/2 cup scotty's everyday pancake mix
- 3 tbsp water
- 1 apple
- 1 egg
- 2 tbsp avocado oil
- 1 tsp scotty’s everyday pure vanilla extract
Directions
In a large bowl, whisk together the water, egg, vanilla extract, and pancake mix.
Take your apple and cut it vertically into 1/4” - 1/2” slices.Using a mini circular cookie cutter, cut out circles from the apple.
Dip the apple rounds into the pancake batter to coat.
Heat a ceramic pan on medium-low flame and coat the pan with 1-2 tbsp avocado oil.
Place the pancake battered apples on the pan. Cook them for a few minutes until golden on both sides.
Serve with maple/coconut sugar, cinnamon, and pure maple syrup.
