Ingredients

1 pack scotty's everyday bread mix
- 2 cups strawberries, diced

1/4 cup + 2 tbsp monkfruit sweetener
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 1 tsp cinnamon
- 1/2 cup cream cheese
- 1 tsp almond extract
- 1 egg, whisked (for egg wash)
- 3 tbsp toasted sliced almonds (garnish)
- 1 tsp cinnamon sugar (garnish)
Directions
Preheat oven at 375ºF
Prep the bread mix as instructed on the package.
In a separate bowl, combine ingredients for strawberry filling: strawberries, Monkfruit sweetener, lemon juice, lemon zest, and cinnamon.
In a small bowl, combine cream cheese and almond extract.
Line a 9 x 13.5 baking sheet and grease parchment paper with evoo. Transfer the dough onto sheet. Lightly grease your fingers with olive oil and spread the dough in an even layer.
Gently add and spread the cream cheese mixture in the middle of dough. Then top with strawberry filling (save 2 tbsp for garnish)Fold the sides of dough over to cover the filling. Brush with egg wash. Sprinkle with sliced almonds and cinnamon sugar.
Bake for 25 minutes. Allow to cool for 15 minutes. Garnish with remaining strawberry mix. Slice and enjoy! (Note: Refrigerate any leftovers)
