This Strawberry Cream Cheese Keto Bread is the perfect pairing with your morning coffee! @scottyseveryday Keto Bread Mix is the perfect base for this delicious recipe. Super easy to work with and best of all it is gluten-free, free of nut flours and 0 net carbs per serving! I used strawberries for the filling, but you can easily swap in other fruit! Try blueberries, cherries, apples, peaches, or pineapple.
ingredients:
- 1 pack of Scotty's Everyday Bread Mix
- 2 cups strawberries, diced
- 1/4 cup + 2 tbsp Monkfruit sweetener
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 1 tsp cinnamon
- 1/2 cup cream cheese
- 1 tsp almond extract
- 1 egg, whisked (for egg wash)
- 3 tbsp toasted sliced almonds (garnish)
- 1 tsp cinnamon sugar (garnish)
instructions
- Prep the bread mix as instructed on the package (Note: I added 2 tbsp Monkfruit sweetener to the mix)
- In a separate bowl, combine ingredients for strawberry filling: strawberries, Monkfruit sweetener, lemon juice, lemon zest, and cinnamon
- In a small bowl, combine cream cheese and almond extract
- Preheat oven at 375F. Line a 9 x 13.5 baking sheet and grease parchment paper with OO. Transfer the dough onto sheet. Lightly grease your fingers with olive oil and spread the dough in an even layer
- Gently add and spread the cream cheese mixture in the middle of dough. Then top with strawberry filling (save 2 tbsp for garnish)
- Fold the sides of dough over to cover the filling
- Brush with egg wash. Sprinkle with sliced almonds and cinnamon sugar
- Bake for 25 minutes
- Allow to cool for 15 minutes
- Garnish with remaining strawberry mix
- Slice and enjoy! (Note: Refrigerate any leftovers)
