Spending this weekend embracing the comforting softness of a cozy morning with every bite of these homemade blueberry pancakes and cookies.

ingredients:
- 3/4 cup softened butter
- 3/4 cup sugar free granulated sugar
- 1/4 cup sugar free brown sugar
- 1 egg
- 1 tsp vanilla
- 1 package of scotty’s pancake mix
- 1 cup fresh blueberries

instructions:
- Preheat oven to 350°F.
- Add parchment paper to a cookie tray that will fit in your fridge.
- In a large mixing bowl, beat the butter until it is soft and fluffy then add in the sugar free granulated sugar and brown sugar, then mix until fully combined.
- Next, add the egg and vanilla and mix again.
- Add in Scotty’s pancake mix and mix until a soft dough forms then gently fold in the blueberries.
- Scoop 2 tbsp of the dough and roll it into a ball then place it onto the parchment paper. Continue for the rest of the dough, spacing two inches apart and refrigerate for 3 hours.
- Once chilled, bake for 13-15 minutes. ENJOY!
