Spending this weekend embracing the comforting softness of a cozy morning with every bite of these homemade blueberry pancakes and cookies.

  • 3/4 cup softened butter
  • 3/4 cup sugar free granulated sugar⁠
  • 1/4 cup sugar free brown sugar⁠
  • 1 egg⁠
  • 1 tsp vanilla⁠ 
  • 1  package of scotty’s pancake mix⁠
  • 1 cup fresh blueberries⁠

  • Preheat oven to 350°F.
  • Add parchment paper to a cookie tray that will fit in your fridge. ⁠
  • In a large mixing bowl, beat the butter until it is soft and fluffy then add in the sugar free granulated sugar and brown sugar, then mix until fully combined. ⁠
  • Next, add the egg and vanilla and mix again. ⁠
  • Add in Scotty’s pancake mix and mix until a soft dough forms then gently fold in the blueberries. ⁠
  • Scoop 2 tbsp of the dough and roll it into a ball then⁠ place it onto the parchment paper. Continue for the rest of the dough, spacing two inches apart and refrigerate for 3 hours.
  • Once chilled, bake for 13-15 minutes. ENJOY!
