I LOVE cupcakes but let’s be real, they are loaded with tons of sugar. Now we finally have a great alternative to enjoy with out the carbs and sugar overload, and lets not forget to mention, they are GLUTEN-FREE!
I’m telling you that you won’t be able to tell the difference. These mixes are super easy to use!

ingredients:
- 6 tbsp of scotty's everyday cupcake & cake mix
- 6 tbsp butter
- 3 large eggs
- 1/3 cup water
- 1 tbsp vanilla extract
- 1/3 cup water
frosting:
- 1 1/2 cup heavy cream
- 4 tbsp cream cheese
- 1 cup powdered truvia
- 1 tbsp vanilla extract
- fresh strawberry slices and lemon zest

instructions:
- Preheat oven to 350° F
- Prepare cupcake mix as instructed on the package.
- Once you have your mix ready, evenly distribute in a muffin pan.
- Bake cupcakes for about 12 minutes or until the edges begin to golden.
- While the cupcakes are baking, prepare your frosting by mixing all ingredients together until well combined.
- After letting your cupcakes cool, apply a thin layer of frosting to them, add a fresh slice of strawberry and top with some lemon zest!
