I LOVE cupcakes but let’s be real, they are loaded with tons of sugar. Now we finally have a great alternative to enjoy with out the carbs and sugar overload, and lets not forget to mention, they are GLUTEN-FREE!
 I’m telling you that you won’t be able to tell the difference. These mixes are super easy to use!


  • 6 tbsp of scotty's everyday cupcake & cake mix
  • 6 tbsp butter
  • 3 large eggs
  • 1/3 cup water 
  • 1 tbsp vanilla extract 
  • 1/3 cup water 


  • 1 1/2 cup heavy cream 
  • 4 tbsp cream cheese 
  • 1 cup powdered truvia 
  • 1 tbsp vanilla extract 
  • fresh strawberry slices and lemon zest


  • Preheat oven to 350° F 
  • Prepare cupcake mix as instructed on the package.
  • Once you have your mix ready, evenly distribute in a muffin pan.
  • Bake cupcakes for about 12 minutes or until the edges begin to golden.
  • While the cupcakes are baking, prepare your frosting by mixing all ingredients together until well combined.
  • After letting your cupcakes cool, apply a thin layer of frosting to them, add a fresh slice of strawberry and top with some lemon zest!
