When we tell you that you'll never buy a lemon loaf from Starbucks again...we mean it! This healthy twist is just as delicious without all of the gluten, carbs, or sugar!
ingredients:
- 1 package of scotty's everyday bread mix
- 1 cup scotty’s everyday allulose sweetener
- 1 cup plain Greek yogurt
- 1/3 cup neutral oil
- 2 tbsp lemon extract
- 2 tbsp lemon zest (zest from 2 lemons)
ingredients for glaze:
- 1 lemon juiced
- 1/2 cup scotty’s everyday allulose sweetener
instructions
- Preheat oven to 350° F
- Mix all the ingredients for the lemon loaf with a wooden spoon in large bowl until combined.
- Bake for 35-40 minutes, until the center is cooked through.
- Cover the top with foil after 20 minutes of cooking to prevent the top from browning too much.
- Once the bread has cooled, mix the sugar and lemon juice for the glaze and spread on top and enjoy!
