Happy December! It’s officially not too early to think about Christmas! I’m SOOO excited about these high protein Keto Strawberry Shortcake Santa Hats. Don’t let their cute simplicity fool you. These are CRAZY delicious and so easy to make. Usually holiday themed recipes are cute but so unappetizing, but I was shocked at how good these are despite how simple they are. The biscuits are perfectly flakey, buttery, and so addictive. They have zero net carbs so you don’t even need to try to resist them this holiday.
ingredients:
- scotty's everyday biscuit mix
- 4 oz cold butter
- 3/4 cup ice water
- 1 cup heavy whipping cream
- 2 tbs vanilla milk isolate protein powder
- 2 tbsp powdered monk fruit sweetener
- strawberries
instructions:
- Preheat oven to 425° F
- Cut butter into pea-sized pieces and place in the freezer for 10 minutes.
- Toss butter with the biscuit mix, and then add in water. Mix with a fork to combine into a dough; it’s normal for bits of butter to remain visible to make it flakey.
- Roll it out and fold it over itself 4 times into a 4x10 inch rectangle.
- Use a 1.5 inch small biscuit cutter and cut out circles, repeat with the remaining dough.
- Bake for 10-12 minutes until done.
- Whip the cream until stiff peaks form.
- Sift in the protein powder and monk fruit sweetener while mixing, adjusting the amount to your taste preference.
- Pipe the whipped cream onto the edges of the biscuits. Cut the stems off the strawberries and place on top of the biscuits, and top with whipped cream.
