  • 1 Package of Scotty's Everyday Keto Biscuit Mix
  • 12 Tablespoons Cold Butter (grass fed preferred)
  • 2 Large Whites
  • 4 Tbsp Ice Cold Water

  • Place refrigerated butter in the freezer for at least 20 minutes
  • Prepare 1 cup of water and ice for 4 Tbsp ice cold water
  • Preheat oven to 350° F with a rack in the middle of the oven
  • In a large bowl, empty the contents of the package
  • Grate the frozen butter using a box grater, or cut up into small small pea size pieces. Add the butter to the bowl with dry mix and the mix using your hands or a fork
  • Add the two egg whites and 4 Tbsp of the ice cold water into the bowl and use a fork to stir until the dough comes together. Work the dough with hands until it comes together (will seem dry at first)
  • Divide the dough into two equal portions. Form each into 6" discs
  • Wrap each dough disc in plastic wrap and refrigerate for at least 30 minutes
  • Remove chilled dough. Place one disc in between two pieces of greased parchment paper. Dough will be slightly sticky
  • Roll out into a 12" circle
  • Remove the top sheet of parchment. Use the bottom parchment to transfer to a 9" pie pan by flipping into the pan with dough down. Remove the second piece of parchment
  • Press evenly in the pie pan. Roll and crimp edges using fingers or a fork
  • Bake for 20-25 minutes or until slightly golden
  • Cool before filling
