Attention mushroom lovers: bring it in! This will forever be the one and only pizza you'll crave for the rest of your life. @elizabeths_table didn't call it epic for no reason! Give it a try and thank her later.
tofu ricotta:
- 1- 14 oz block of firm tofu
- 1/2 lemon
- 2 tbsp nutritional yeast
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp cayenne pepper
- salt
- pepper
mushroom topping:
- 12 oz sliced mushrooms
- 1/2 small yellow onion
- 3 minced garlic cloves
crust:
- scotty’s pizza crust mix
- 3/4 cup water
- 1 tbsp tahini
instructions:
- Preheat the oven to 425°F.
- Line a pizza pan with parchment paper.
- Once the dough is ready, roll it out and curve the edges in to create a crust.
- In a medium bowl, mash the tofu with a fork. Stir in the lemon juice, nutritional yeast, onion powder, garlic powder, cayenne pepper, salt, and pepper. Set aside.
- Place the mushrooms, onion, and garlic on a large plate. Microwave on high for 2-3 minutes, until soft. Pat dry with a paper towel. Set aside.
- Prepare the crust according to the package directions, replacing the oil with tahini to keep the recipe oil free.
