Attention mushroom lovers: bring it in! This will forever be the one and only pizza you'll crave for the rest of your life. @elizabeths_table didn't call it epic for no reason! Give it a try and thank her later.

tofu ricotta:

  • 1- 14 oz block of firm tofu 
  • 1/2 lemon 
  • 2 tbsp nutritional yeast 
  • 1 tsp onion powder 
  • 1 tsp garlic powder 
  • 1/2 tsp cayenne pepper 
  • salt
  • pepper 

mushroom topping:

  • 12 oz sliced mushrooms
  • 1/2 small yellow onion
  •  3 minced garlic cloves


  • scotty’s pizza crust mix
  • 3/4 cup water
  • 1 tbsp tahini


  • Preheat the oven to 425°F. 
  • Line a pizza pan with parchment paper. 
  • Once the dough is ready, roll it out and curve the edges in to create a crust.
  • In a medium bowl, mash the tofu with a fork. Stir in the lemon juice, nutritional yeast, onion powder, garlic powder, cayenne pepper, salt, and pepper. Set aside. 
  • Place the mushrooms, onion, and garlic on a large plate. Microwave on high for 2-3 minutes, until soft. Pat dry with a paper towel. Set aside. 
  • Prepare the crust according to the package directions, replacing the oil with tahini to keep the recipe oil free.
