Ever tried putting avocado in muffins? Neither did we until we got our hands on this recipe from happyhealthyhopey! Try these out and let us know what you think!

  • 1 1/2 cups scotty's pancake waffle mix
  • 7 ounces keto chocolate nut & seed butter
  • 1 teaspoon scotty's vanilla extract
  • 2 ripe large avocados
  • cacao chocolate chips
  • 1/4 cup water
  • 1 egg

  • Preheat oven to 345°F
  • Combine all ingredients in a food processor and once mixed toss in chocolate chips.
  •  Line parchment paper muffin tins w coconut oil and pour in batter.
  • Top with more chocolate chips or leave some plain then bake at 345 for 15 min. 
  • Once cooled-drizzle w more melted chocolate.
