At this point, it seems like every other recipe we're convincing you that THIS one is the most delightful thing you'll ever come across, but @actualfoodie has truly outdone herself!

  • 1 cup scotty's everyday pancake mix
  • 1 tsp vanilla bean paste
  • 6 tbsp water
  • 2 large eggs

cinnamon roll filling:

  • 4 tbsp room temp butter
  • 1/3 cup light brown sugar
  • 1/2 tsp cinnamon 

cream cheese glaze:

  • 4 tbsp room temp butter
  • 4 tbsp room temp cream cheese 
  • 3/4 cup powdered sweetener of choice
  • 1/2 tsp vanilla bean paste


  • In a medium sized bowl, mix together pancake mix, vanilla bean paste, water and egg.
  • In a another bowl mix together butter, brown sugar and cinnamon. Add filling to a ziploc bag and set aside.
  • In a saucepan over medium heat, grease with non stick cooking spray, then add about 1/4 cup pancake mixture. Let bubble and cook on one side.
  • While the pancake cooks, cut a corner of the ziploc bag with the filling and add cinnamon roll filling on top of pancake in a swirl pattern. Let cook for about another minute then flip.
  • Repeat steps until all pancakes are made.
  • In a small saucepan, melt butter then whisk in cream cheese until smooth. Add in powdered sugar and vanilla.
  • Drizzle the glaze on stack of pancakes and enjoy!
