If you've followed any of the recipes we've posted here so far, you know we love a good spin on a classic! 
@chelseapeachtree enlightened us with her baked pancakes and they absolutely do not disappoint! Oh and cutting out the part where you hover over your stove for an eternity while they cook and just placing them in the oven instead makes this recipe a 10/10! 


  • 1 1/2 cups of scotty's pancake mix 
  • 3/4 cup of water⁠ 
  • 3 flax eggs⁠ 
  • 3 tsp of vanilla extract⁠ 
  • 1/4 cup of raspberries⁠ 
  • 3-4 tbsp slivered almonds⁠ 
  • butter


  • Preheat oven to 350° F 
  • Mix the pancake mix, water, flax egg, and vanilla together in a large bowl.
  • Grease a cast iron with butter then pour the pancake mix into it.
  • Sprinkle raspberries and almonds on top, or whatever toppings you'd like to use.
  • Bake for 20-23 minutes, until you can insert a toothpick and remove it cleanly
  • Top with keto pancake syrup and enjoy!
