Do you love breakfast and brunch sandwiches like we do!? You MUST try this twist on the traditional BLT sandwich! A scotty's gluten-free waffle piled high with fresh and savory ingredients for the ultimate sandwich that provides indulgence without the guilt!
ingredients:
- 1 cup scottys everyday pancake & waffle mix
- 2 large eggs
- 6 tbsp water
- 2 tsp scotty’s everyday vanilla extract
- cream cheese
- bacon
- tomato
- provolone cheese
- romaine lettuce
- salt
- pepper
- fresh basil
- lemon zest
- avocado
instructions:
- Prepare waffles by following directions on Scotty’s Everyday Keto Pancake & Waffle Mix box (we doubled the recipe to make two waffles)
- Break each waffle into 4 pieces (at the division lines)
- spread cream cheese on the bottom of 4 small waffle piece to preference
- stack the same small waffle pieces with bacon, tomato, provolone cheese, lettuce, egg, fresh basil, salt, pepper, and lemon zest
- spread avocado on the remaining waffle pieces and place on top of the stacked ingredients to make a sandwich and ENJOY!
