ingredients:

  • 1 cup scottys everyday pancake & waffle mix
  • 2 large eggs
  • 6 tbsp water 
  • 2 tsp scotty’s everyday vanilla extract
  • cream cheese
  • bacon
  • tomato
  • provolone cheese 
  • romaine lettuce
  • salt
  • pepper
  • fresh basil
  • lemon zest
  • avocado

instructions:

  • Prepare waffles by following directions on Scotty’s Everyday Keto Pancake & Waffle Mix box (we doubled the recipe to make two waffles)
  • Break each waffle into 4 pieces (at the division lines)
  • spread cream cheese on the bottom of 4 small waffle piece to preference
  • stack the same small waffle pieces with bacon, tomato, provolone cheese, lettuce, egg, fresh basil, salt, pepper, and lemon zest
  • spread avocado on the remaining waffle pieces and place on top of the stacked ingredients to make a sandwich and ENJOY!
