This crunchy peanut brittle is made with Scotty’s Everyday Allulose & Monk Fruit Sugar Replacement for rich, caramelized sweetness with fewer calories and no added sugar. A delicious, diabetic-friendly and low-glycemic treat that delivers traditional flavor with a better-for-you twist.

ingredients:
- 2 cups scotty's everyday allulose & monk fruit sugar replacement
- 8 tbsp (one stick) of butter
- 2 cups lightly salted, dry roasted peanuts
- 1/4 tsp baking soda
- 2 tsp scotty's everyday vanilla extract

instructions:
- Line a sheet pan with parchment paper and spray well with release spray.
- In a medium saucepan, combine the allulose & monk fruit sugar replacement and butter.
- Heat on a medium heat until the candy thermometer reaches 170°C or 338°F, stirring continuously.
- Remove from heat and add Baking Soda, Vanilla Extract, and Peanuts.
- Mix until well combined.
- Pour onto the lined sheet pan and spread evenly into a thin layer.
- Place in refrigerator until completely cooled.
- Once cooled, break into pieces and store in an airtight container.
- Store in refrigerator
