ingredients:

- 1 package of Scotty's Everyday Keto Cupcake & Cake Mix
- 3 eggs
- 1/3 cup water
- 8 Tbsp melted butter (grass fed preferred)
- 1 Tbsp Vanilla Extract
- 1 package of Scotty's Everyday Keto Bread Mix
filling
- 1/3 cup brown erythritol (like Swerve)
- 2 Tbsp Scotty's Everyday Keto Bread Mix
- 1 Tbsp Cinnamon
topping
- 1/3 cup brown erythritol (like Swerve)
- 1/3 cup Scotty's Everyday Keto Bread Mix
- 1 Tbsp Cinnamon
- 4 Tbsp cold butter (grass fed preferred)
instructions
- To make the topping, blend the dry ingredients: brown erythritol, Scotty's Everyday Keto Bread mix, and cinnamon until well combined
- Cut the cold butter into pea size pieces
- Add the butter to the dry mix and work with fingers or a pastry cutter to create a crumbly mixture
- Prepare the Scotty's Everyday Keto Cupcake & Cake Mix batter as directed on the package
- Pour 1/2 of the batter in a greased 8 x 8 square baking pan spreading evenly to all corners of the pan
- Sprinkle the filling on top of this layer of batter
- Pour the remaining batter on top of the filling and spread evenly to all corners of the pan, disturbing the filling layer as little as possible
- Sprinkle the topping evenly on the top
- Bake 30-35 minutes until a toothpick inserted in the center comes out clean
- Cool completely on a wire rack before slicing or serving
