ingredients:

cake

  • 1 package of Scotty's Everyday Keto Cupcake & Cake Mix
  • 3 eggs 
  • 1/3 cup water
  • 8 Tbsp melted butter (grass fed preferred)
  • 1 Tbsp Vanilla Extract
  • 1 package of Scotty's Everyday Keto Bread Mix

filling

  • 1/3 cup brown erythritol (like Swerve)
  • 2 Tbsp Scotty's Everyday Keto Bread Mix
  • 1 Tbsp Cinnamon

topping

  • 1/3 cup brown erythritol (like Swerve)
  • 1/3 cup Scotty's Everyday Keto Bread Mix
  • 1 Tbsp Cinnamon
  • 4 Tbsp cold butter (grass fed preferred)

instructions

  • To make the topping, blend the dry ingredients: brown erythritol, Scotty's Everyday Keto Bread mix, and cinnamon until well combined
  • Cut the cold butter into pea size pieces
  • Add the butter to the dry mix and work with fingers or a pastry cutter to create a crumbly mixture
  • Prepare the Scotty's Everyday Keto Cupcake & Cake Mix batter as directed on the package
  • Pour 1/2 of the batter in a greased 8 x 8 square baking pan spreading evenly to all corners of the pan
  • Sprinkle the filling on top of this layer of batter
  • Pour the remaining batter on top of the filling and spread evenly to all corners of the pan, disturbing the filling layer as little as possible
  • Sprinkle the topping evenly on the top
  • Bake 30-35 minutes until a toothpick inserted in the center comes out clean
  • Cool completely on a wire rack before slicing or serving
