Low Carb French Toast
Nothing says "the weekend" quite like classic French toast. But when was the last time you indulged in this breakfast and brunch favorite without feeling *ick* after?
We gave French toast our low-carb, gluten-free treatment with bread made from our keto mix. You could even add your favorite keto vanilla protein powder to your egg mixture for an extra hit of nutrition. Now you can make French toast everyday if you want. Skillets out!
What you'll need:
Scotty's Everyday Bread, baked and sliced
1 large egg
1 tablespoon heavy cream
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
1 1/2 teaspoon granular monk fruit or erythritol
1 tablespoon butter
1/2 teaspoon powdered monk fruit/erythritol Blend
1. Whisk together the egg, heavy cream, cinnamon, vanilla, and granular monk fruit or erythritol.
2. Dip bread in the egg mixture, flipping to coat both sides.
3. In a frying pan over medium heat, melt the butter. Add the bread and cook 1-1.5 minutes, until golden brown. Flip and cook for 1-1.5 minutes again, until browned on the other side.
4. Sprinkle French toast with 1/2 teaspoon powdered monk fruit/erythritol blend (or to taste). Top with keto maple syrup if desired!
